Let's roll, ladies!

Had a taste of this wonderful exotic appertizer during my various trips to Ho Chi Minh City. Locals called it Goi Cuon Thit Heo Nuong (generally known as “Goi Cuon”) or Vietnamese fresh spring rolls usually with hoisin peanut dipping sauce. This Vietnamese Spring roll or summer roll is a traditional Vietnamese food which is wrapped in rice paper. Like most of Vietnamese food, it is a very healthy diet which all ingredients are made fresh from any kind of meat (grilled or boiled), shrimp, or fish or even squid, rice vermicelli and vegetable. Served cold, with either a simple sauce consisting of Hoisin sauce, garlic, peanut butter, and water or a combination of fish sauce, garlic, sugar, lime, and carrot.The beauty of these spring rolls is that you can you just about any ingredients you like. Substitute the shrimp with fried tofu for a vegetarian version; use snow peas and crisp bean sprouts instead of the carrots and cucumbers.

It can be made with any popiah skin but getting the original rice paper can be a bonus. Not very difficult to get it as many hyper-marts stores them on their shelves nowadays. Many can't distinguish between Spring Roll and Egg Roll...it's not the same at all. Egg roll is usually fried while spring rolls is made fresh. Well ... today, we're going to share how to make this wonderful rolls.

For the Spring Rolls
6 sheets rice paper ~ soaked in warm water for a few minutes
Green sprouts / alfalfa sprouts
3 ounces rice vermicelli, cooked ~ I didn't use this as it was out of storage in the pantry :)
Shredded carrots

Shredded jicama
Sliced Monkey's Ears Mushrooms
9 large shrimps, cooked, peeled, deveined and cut in halfs
(Be creative, you can add more protein to your diet by using boiled beef, crab, or any other meat you have in mind)

For the Dipping Sauce
1 tablespoons fish sauce
3 tablespoons warm water
1 1/2 tablespoons fresh lime juice
3/4 clove garlic, minced
1 1/4 tablespoons white sugar
2 3/4 tablespoons hoisin sauce
1 teaspoon finely chopped peanuts - optional

Cendawan kelameme/telinga monyet :)) dlm bentuk kering
Spring Rolls
6 kpg kulit popiah ~ direndam dlm air suam beberapa minit
 Taugeh hijau/ Taugeh alfalfa
3 oz suun, direbus ~ Saya tak letak sbb kehabisan stok :)
Lobak merah - parut kasar

Sengkuang - parut kasar
Cendawan kelameme - dihiris
Udang - direbus/kukus
(Boleh tambah ayam, daging, ikan atau lain2 utk tambahan protien )




Sos Kacang Hoisin
1 sb sos ikan / nampla
3 sb air suam
1 1/2 sb jus limau kasturi
3/4 labu bawang putih - dicincang
1 1/4 sb gula
2 3/4 sb  sos hoisin
1 sk serbuk kacang tumbuk - optional

This is how the paper rice looks like - before being soaked.
The ingredients - shredded carrot & jicama, green sprouts, mushroom, parboiled chicken & shrimp.
Put the veges....
Then place the shrimp & chicken on d vege...

Fold d sides...

And roll it all the way!

Beautiful colors of food, don't you agree? The BEST part is....indulge without guilt hehehe! Have as many as your belly can hold and still not to worry about getting into that red kebaya this raya :-D
Goes well with any sauce but the best is still the hoisin peanut sauce.
